This bright light roast comes from one of the southwestern region's largest commercial producers, whose farms are irrigated by sustainable drip systems fed by the Ruvuma River, part of broader environmental and social stewardship work that has helped secure water for the 300,000 residents of the river basin.Only about 10% of the world's coffee develops the peaberry mutation, where a cherry grows a single round seed instead of two. That concentration is said to make peaberry sweeter, since the fruit sugars are not split between two beans, and the small, round beans demand careful hand-picking.
